I have been doing alot of paper piecing this year. I love the intricate designs and the accuracy. I find if I cut the fabric just slightly larger than the piece plus 1/4 inch seam allowances then if I make one side a tad to deep or a tad of center it doesnt matter. It keeps me from seam ripping which is next to impossible to do without wrecking the paper pattern. And that tiny bit extra doesnt seem to cause any wasted fabric. I guess I cut the pieces to size plus 3/8 seam allowance all around.
I would certainly encourage you to try paper piecing if you havent already. It is really fun, and gets oodles of ahhhhs from quilters and non quilters alike.
Hugs, and happy quilting
